Like, seriously, I love Toph and I would love to know who she got with to have Lin. They could make a whole spin-off series dedicated to "How I Met Your Father".
For the purposes of this series, I'm treating Lin's biological father as an unknown -- so in the story this artwork is for, he'll be someone that quickly entered and exited Toph's life, who she harbors a grudge toward, and thus he's not talked about (and people avoid mentioning him in her presence, that kind of thing).
The idea will be that Sokka will eventually get together with Toph in helping her deal with motherhood, and in turn become a step dad for Lin. For me, it has strong personal meaning because I have never met my biological father and know nothing about him or his life, but I did eventually have a positive step father figure while growing up.
